Totally in love with this pasta salad. Full of deep flavour from the sun-dried tomatoes, roasted red pepper, toasted pine nuts, feta and the deliciously tangy and garlicky goat’s yoghurt dressing. A super summery pasta dish.

This is going to be a quick one guys, as I am currently on holiday, finally! As you’re reading these lines the Mister, Westley and myself are up in the mountains of central Greece.

I’m sure you won’t mind me getting right down to the nitty gritty for once, hey?! Well this recipe doesn’t actually need much introduction. Sun-dried tomatoes, roasted red pepper, toasted pine nuts and feta cheese, tossed into a big bowl of pasta with a gorgeous dressing made of goat’s yoghurt for extra tang. And yes of course there is some garlic in there! Do you need to hear much more?

Ingredients

500 gr pasta (fusilli is good for this)

1 Tbs olive oil (for the pasta)

130 gr sun-dried tomatoes (preserved in olive oil), chopped

90 ml (6 Tbs) goat’s yoghurt

60 ml (1/4 cup) olive oil

60 ml (1/4 cup) red wine vinegar

2 garlic cloves

1/2 tsp salt

1/2 tsp black pepper, freshly cracked

50 gr pine nuts

150 gr roasted red pepper (from a jar), chopped

20 gr (1/2 cup) parsley leaves, finely chopped

200 gr feta cheese, crumbled

Step 1

Boil the pasta according to packet instructions, drain and pop it back into the pan with one tablespoon of olive oil. Shake the pan well to coat the pasta and set aside.

Step 2

Combine 50 grams of the sun-dried tomatoes, the goat’s yoghurt, olive oil, red wine vinegar, garlic, salt and pepper in a food processor, and process until smooth.

Step 3

Heat the pine nuts in a non-stick frying pan over high heat for 1-2 minutes, until they start to get some colour. Add them to the pasta immediately so they don’t burn (watch them continuously because they catch super quick).

Step 4

Mix the rest of the sun-dried tomatoes, red pepper, parsley and dressing into the pasta. Add the feta, toss gently to combine and serve.
