Chocolatey chia pudding with coconut yoghurt, flax meal and cocoa powder. Nourishing and so practical! A great make ahead breakfast.

A very quick post today, to go with this super quick recipe. I’m guessing you don’t need an introduction to chia pudding, am I right? Well, it’s such a great breakfast I really wanted at least one version of it here on the blog. So I made a chocolate one and served it with banana, pumpkin seeds and a broken up biscuit, because, why not? Peanut butter would of course be another ideal topping, as it goes beautifully with both chocolate and banana. Flax meal helps thicken the pudding and a bit of sweetness makes it all even more appealing.

The quantities here are for one, but you can make up a batch and have them on hand for the easiest breakfast ever! And when those of you who work in offices are allowed back, you can pop one in your bag as you rush out the door!

Ingredients

1/4 cup coconut yoghurt

1/4 cup water

1 Tbs chia seeds

2 tsp flax meal (crushed flax seeds)

2 tsp cocoa powder

1 tsp honey or maple syrup

1 pinch salt

banana to serve

seeds (pumpkin, sunflower etc) to serve

broken up biscuit (cookie) of your choice, to serve (optional) or

peanut butter to serve (optional)

Step 1

Mix the coconut yoghurt, water, chia, flax meal, cocoa, honey (or maple) and salt in a small jar. Leave overnight to thicken and serve with some chopped banana, seeds and a biscuit, or try a dollop of peanut butter!

Chia puddings are great for meal prep, make a whole batch and enjoy all week!
