An easy, delicious frozen treat made with a handful of wholesome ingredients. Bananas, coconut milk, honey and either raspberries or cacao powder!

This is going to be a short one today. My previous post had quite a bit of information so I thought I would balance things out with a quickie. It’s also fitting for this particular recipe, as it’s, well, a quick one! Ok there is some freezing time involved obviously, but the hands-on part is easy and only takes a few minutes.

Now, you may already be familiar with what some people call “nice cream”. Basically it’s frozen banana blended into a thick and creamy ice cream-like concoction. It’s pretty amazing really. Well you can make variations of this with other flavours, as I did here by adding other ingredients, or you can leave it as is – it’s still delicious even with just banana. Keep in mind the riper the bananas are before they are frozen, the sweeter your ice cream will be. So you can adjust the sweetener accordingly (or even avoid it altogether if you prefer).

I made a raspberry version by adding frozen raspberries, and a chocolate version with cacao powder. Other fruit you could add is mango, peach, pineapple or other berries. I’ve also seen versions with nut butters and you can be sure I’ll trying one with peanut butter!

Before I go I just wanted to say something about the term “nice cream”. I am not using it in my title as you can see, because I disagree with such labels. Calling a certain food group “nice” might imply another food group is not. Regular ice cream is also nice (it’s actually very nice). Sometimes we might prefer a treat that is made from scratch with nutritious ingredients, sometimes we might prefer a treat that is just that. A treat. Even if it’s full of processed sugar (shock horror!) even if we can’t identify every single ingredient on the packet. You guys… it’s fine.

Now, let’s see how to make this four ingredient frozen treat!

Ingredients

450 gr banana (approx. 3 large, weighed after peeling)

240 ml (1 cup) coconut milk (from a tin, not the drink)

2 Tbs honey or maple syrup

50 gr (approx. 1/2 cup) cacao powder - for chocolate version

120 gr (approx. 1 cup) frozen raspberries - for raspberry version

Toppings of your choice (I used extra raspberries, chopped dark chocolate and a chopped sesame seed bar similar to a granola bar)

Step 1

Cut the banana into chunks, place them on a tray or in a freezer bag spaced apart, and freeze them overnight.

Step 2

In a large blender or food processor combine the coconut milk, honey or maple syrup, frozen bananas and finally either the cacao powder or the frozen raspberries.

Step 3

Blend until smooth and creamy.

Step 4

Now you can either serve as is if you like soft-serve ice cream, or you can transfer to a freezer-safe container and freeze until a bit firmer, approx. 2 hours. (Please see notes) Add topping of choice and enjoy!

Notes:
-The chocolate version might be softer/meltier after blending, due to the higher proportion of room temperature ingredients. It also depends on the size of the appliance and how long it takes to achieve smoothness.

-After freezing, the chocolate version will be firmer than the raspberry; I think this is because there is less fruit in it. So don’t put both flavours in one container as I did, since you might need to leave the chocolate ice cream out for a few minutes before serving.

-I used cones in the photos but I prefer the ice cream from a bowl, as the flavour of the cone slightly overpowers the ice cream.
