Packed with banana, oats, tahini, honey, flax seed and chocolate chips, these muffins are a great snack that quickly hits the hunger spot, or the “I need something sweet” spot.

Hey all! Is it too late to say Happy New Year? Here in Greece we say it practically until Valentine’s Day… No? Yeah, ok maybe I’m pushing it a bit. But it’s my first post for 2018 so I have to say something, right?! Have a good one guys!

So, shall we start the year with some healthier banana muffins? These babies are tasty, super filling and have some really healthy ingredients tucked inside. Banana, oats, tahini, honey, olive oil, flax seed and dark chocolate! And there is only a tiny bit of brown sugar, so they are mostly naturally sweetened.

If you need something to have on hand as a midmorning or afternoon snack, either at home or at the office, these muffins are a good idea.

They aren’t fluffy or light, they are quite dense, but that’s what makes them substantial and filling.

Ingredients

170gr all purpose flour

50gr oats, quick cooking, plus extra for sprinkling

15gr (1 ½ Tbs) flax seeds, plus extra for sprinkling

1 ½ Tbs baking powder

1/2 tsp salt

2 eggs

5 Tbs tahini

4 Tbs honey

6 Tbs olive oil

25gr (2 Tbs) brown sugar

300gr banana, very very ripe and soft (weighed after peeling)

70gr chocolate chips (or chopped chocolate)

You want super duper ripe bananas. I mean black and really soft. If yours aren’t quite there yet, pop them on a grease-proof paper lined baking sheet and stick them in the oven at 100C heat until, well, black and really soft. They might start leaking juices but that’s ok! Let them cool for a while before peeling.

Step 1

Preheat oven to 160C fan assisted (180C conventional) and line a 12 hole muffin tin with paper liners.

Step 2

Mix the flour, oats, flax seeds, baking powder and salt in a bowl, using a whisk to get rid of any lumps.

Step 3

In a separate, large bowl, lightly beat the eggs with a fork, then add the tahini, honey, olive oil and brown sugar, beating in between to incorporate. Mash the bananas into the mixture until fairly smooth (some lumps are ok).

Step 4

Fold the dry ingredients into the wet and just before they are completely mixed add the chocolate chips and continue folding until you can’t see any more flour. Don’t overmix!

Step 5

Divide the batter between the muffin tin holes (an ice cream scoop is the best way) and sprinkle the tops with some oat flakes and flax seed if you want them to look pretty.

Step 6

Bake for about 25-30 minutes or until a toothpick comes out clean from the centre of a muffin (mine took 27 minutes).

Note: As I mentioned above, don’t expect light and airy muffins. These are quite dense, but that makes them more filling!
