A delicious combination of carrot and orange, with a touch of spice from some turmeric and cumin, cooked up into a fabulous soup in the slow cooker.

I can hear you groaning already. Not another soup! Ok, sorry, I know… Too much soup. But this was one of those freak-success recipes. You know, when you have something leftover, you need to use it up, and you think what the heck, I’ll just pop this in the slow cooker and hope for the best?

Then I had an idea for a really interesting addition (the orange juice), which could have meant the whole pot going down the drain. But guess what? It was fabulous! Not just ok, it was blog-worthy.

So then I was stuck. I really wanted to post it, and I couldn’t wait till later because soon it’s going to be too warm for soups. So I had to go with back to back slow cooker soup recipes. Sorry. Well actually, I’m not sorry. ‘Cause it’s good soup! Try it and see.

Aaand I’ve just this minute remembered to google “my” creation. So apparently carrot and orange soup is a thing. As in, a well-known, very popular thing. I promise I had never heard of it before! Arghh, I hate when this happens.

But I can’t honestly say I’m surprised, it’s so good, of course someone would have thought of it before me. Oh well. I think my choice of spices is a little different from most of the other trillion recipes out there…!

Ingredients

600gr carrots, topped, tailed and washed well (weigh after prep)

3 Tbs olive oil

3/4 tsp salt

1/2 tsp black pepper

1/2 tsp turmeric

1/2 tsp cumin

720ml (3 cups) hot water

100ml (6Tbs + 2 tsp) orange juice, from freshly squeezed oranges

nigella seeds to serve (totally optional, I only used them to look nice!)

If you use organic carrots you don’t need to peel them. Just give them a good wash and scrape any dodgy parts if necessary.

Step 1

Chop the carrots and pop them in the slow cooker insert. Add the olive oil, seasoning and spices. Pour the water over everything and cook on low for 8-10 hours or until the carrots are soft and blendable (i.e. won’t kill your blender).

Step 2

{Note: Mine was on for 12 hours but since then I have realised that something’s not quite right with my slow cooker, it’s taking way to long to cook stuff. So best thing is to check for tenderness. Although even if you leave the carrots cooking for ages they will be fine!}

Step 3

Use a stick blender to blend your soup till nice and smooth. It will be quite thick. Add the orange juice, stir, and leave on high for another 15 minutes till nice and hot.

Step 4

Serve with whatever garnishes you fancy. Could be nigella seeds, fresh coriander, croutons, or crumbled feta cheese (the feta is delish).
