Tasty honey ring cereal is transformed into a delicious snack with peanut butter, honey and a white chocolate topping. Super easy and quick.

I made these cereal bars for a guest post on Craftaholic.gr, a lovely craft blog belonging to the very talented Athina. There are also some posts in English, to take a wander over there and have a look around at her beautiful creations!

Since Craftaholic has many mummy readers, I thought I would make something that kiddies and grown ups would both love. Honey ring cereal is one of my favourites, and pairs really well with peanut butter and, um, honey. So whip some of these bars up for a Sunday treat, or make them during the week for an after school snack. Or a tv watching snack. Or any kind of snack. They are delish if I may say so myself!

Ingredients

4 cups honey ring cereal

1/2 cup (8 Tbs) peanut butter

1/2 cup (8 Tbs) + 1 tsp honey

160gr white chocolate, chopped

3 Tbs peanuts, optional

Step 1

Put the honey rings in a large bowl. In a separate heat-proof container melt the peanut butter and half cup of honey in the microwave till runny. Pour the mixture over the cereal and mix well with a wooden spoon to coat all the rings.

Step 2

Line a baking dish (mine is 25x18cm) with plastic wrap (cling film) and pour in the cereal mixture. Spread and press down very well with your palm. This is important so the bars don’t fall apart when cut. Press down well without forgetting the corners. Place dish in the fridge for a couple of hours.

Step 3

Melt the white chocolate with the teaspoon of honey in the microwave (20 second blasts stirring inbetween). Stir in the peanuts and spread over the cereal mixture in the dish. This is a little tricky, so instead you could just drizzle the melted chocolate over the top, forming lines, and sprinkle the peanuts on top of that. Refridgerate again till the topping is set. Cut into 12 bars. These are best stored in the fridge.
