My beloved beet and feta combo is back, in this simple but delicious salad. I’ve paired it with mixed greens, walnuts and a super balsamic vinaigrette. The beetroot is not only spiralized, it’s also raw!

Have you tried raw beetroot? It’s actually really really nice. I first tried it years ago in a mixed salad in England, in which it was cut into matchsticks. And that there is the secret to delicious raw beets. Cutting them very thinly. The taste is quite earthy, but when they’re sliced nicely it’s not overpowering, it’s just right. My favourite way to slice nowadays is with the spiralizer. So I put it to work and here we are. Delicious AND pretty! (so pretty I’ve been doing things like this)

Ingredients

120gr mixed green salad

130gr beetroot, spiralized (you might want to also cut the long noodles for easier fork-loading! – If you don’t have a spiralizer (whaa?) you could use a mandolin)

70gr feta cheese, crumbled

a handful of walnuts

For the balsamic vinaigrette

3 Tbs olive oil

2 Tbs balsamic vinegar

1 tsp Dijon mustard

1/2 tsp thyme, dried

1/2 tsp pepper, freshly cracked

1/4 tsp salt

Step 1

Mix the greens, beetroot, feta and walnuts in a large bowl.

Step 2

In a clean jam jar combine the olive oil, balsamic, mustard, thyme, pepper and salt. Close the lid and shake till combined. Pour as much as you want over the salad and toss well.
